His work focuses on translating strategy into execution, supporting growth through disciplined structuring, operational leadership, and market-specific delivery. 

Billy specialises in building scalable operating models, aligning teams to execution priorities, and improving performance through organisational design and human capital optimisation.

Billy’s career spans multiple industries and geographies, enabling him to operate effectively at the intersection of strategy, capital, and on-the-ground execution. He is recognised for his ability to navigate complex markets, align diverse stakeholders, and steward initiatives from early structuring through to operational rollout.

He has worked extensively with multinational corporations, private equity firms, and family offices, supporting capital raising, franchising, licensing, and strategic partnerships across both developed and emerging markets.

In parallel with his advisory work, Billy is an experienced entrepreneur and operator. He has co-founded and led ventures across health and wellness, brand licensing, managed services, food and beverage, leisure, and manufacturing, bringing a practical, execution-first mindset to every engagement.

His hands-on experience includes designing and scaling product-led sales platforms, building direct-to-market systems, and managing cross-border partnerships across Asia, Australia, and the United States.

Billy is active across specialist Asia-Pacific markets, with professional experience spanning Australia, Thailand, Cambodia, the Philippines, and the United States.

Vons is a seasoned restaurateur with over 25 years of experience across the hospitality and food & beverage industry, spanning concept creation, operations, and customer experience.

More than two decades ago, he founded Grill Steak Seafood, which has since become a well-regarded dining destination for both locals and visitors. With locations in Melbourne’s prestigious Hardware Lane and in Essendon, the restaurants are known for their modern fusion approach, blending Italian, Australian, and international influences within refined yet accessible dining environments.

Vons’ venues are designed to accommodate a broad range of dining occasions, from relaxed, casual grazing to premium, indulgent experiences. His menus reflect this versatility, offering everything from light bruschetta, fresh salads, and handmade pasta to oyster platters and generous, high-quality meat and seafood dishes.

His core expertise includes restaurant concept development, kitchen and bar operations, people and performance management, project delivery, marketing, and the planning and execution of functions and events. Across all ventures, Vons maintains a strong focus on consistency, service quality, and operational excellence.

Building on his extensive experience in Australia, and drawing on his heritage as a Cambodian-born Australian, Vons’ latest venture, Riverview Restaurant & Bar, is located along the Tonlé Sap River in the heart of Phnom Penh. The venue is positioned as a destination for casual dining, while also serving as a cultural showcase, celebrating the richness, history, and artistry of the Khmer Empire within a contemporary hospitality setting.
