With locations in Melbourne’s prestigious Hardware Lane and in Essendon, the restaurants are known for their modern fusion approach, blending Italian, Australian, and international influences within refined yet accessible dining environments.
Vons’ venues are designed to accommodate a broad range of dining occasions, from relaxed, casual grazing to premium, indulgent experiences. His menus reflect this versatility, offering everything from light bruschetta, fresh salads, and handmade pasta to oyster platters and generous, high-quality meat and seafood dishes.
His core expertise includes restaurant concept development, kitchen and bar operations, people and performance management, project delivery, marketing, and the planning and execution of functions and events.
